Thanksgiving is my family’s favorite holiday and a mass of first- and second cousins gathers together every year. How grateful I am for my sweet family!

The feast is a rite that borders on religion for us. We’re from the Northeast and we’re mostly Scottish-American, so it’s ur-traditional, Pilgrim-esque. Definitely no garlic or cayenne involved.

As a result, I’d never heard about deep-frying turkeys until a few years ago, let alone smoking – and I only just now heard about brining in conjunction with both. Oh my!

So, here’s a little turkey porn, featuring 1) Deep-Fried Turkey Brined in Cayenne and Brown Sugar; 2) Wood-Smoked Turkey; 3) Citrus-Marinated Turkey.

These three recipes require up to three days of preparation, so it’s too late for today – but Christmas is only a month away…
